This is a shot from Evelyn's. She was preparing fresh Strawberry Shortcake or an approximation/ creation of a dish similar. One of the best things about this project is all the amazing homecooked food Lindsay and I have been able to eat! This morning we had the Chuckwagon's Eggs Benedict for the second time- so amazing. The beef is raised by the owner of the restaurant and is the tenderest, most savoury beef you'll experience anywhere. For anyone looking for a really great breakfast, the Chuckwagon is only about 45 minutes from Calgary and it located in Turner Valley.
Evelyn's is a bit further but the baked goods are to die for. Plus both places have great ambiance and friendly owners and staff. The same goes for Marv's in Black Diamond. It's been a great experience getting to know the people and the stories behind each of these places. I have high hopes that the final installation will be rich with narrative and mood.
